Tips and Tidbits

This recipe was given to me by my mother-in-law, Lola.  If you're not fond of soy sauce, you might want to cut back to 1/4 cup.  These egg rolls are great, much better than anything I've found in the store!

Egg Rolls

1 medium head cabbage
2 medium onions
4 large carrots
3/4 pound chicken breast in 1/2" slices
3/4 pound sirloin steak in 1/2" slices

2 packages egg roll wrappers
1/2 cup soy sauce
2 green peppers
1 tablespoon oil
3 cups oil for deep frying

Shred carrots; chop cabbages, onion and bell peppers. Place in large pot with enough water to cover vegetables; bring to a boil Cook about 15 minutes. Drain all water off. Stir-fry meat in tablespoon of oil. When done, add soy sauce; cook 5 minutes. Add to vegetables and stir well. Place mixture by spoonfuls on egg roll wrappers. Fold according to package directions. Deep fry until golden brown.
