Tips and Tidbits

My little brother's favorite ice cream is cherries, pecans and cream.  For his birthday last year I created this cake with him in mind.  It was a big hit, and it looks so pretty when you are finished.

Cherries, Pecans and Cream Cake

1 white cake mix (plus ingredients to prepare)
1-8 ounce tub Cool Whip
1 tub white icing

1 large can cherry pie filling
1 1/2 cups pecan halves.
 

Prepare cake mix according to package directions and bake in 2 9 inch round pans.  Allow cakes to cool completely.  Place bottom cake on cake platter (protect with small sheets of wax paper if you like).  Mix icing and cool whip together and frost the top of the cake with a small bit of the mixture.  Spread 3/4 can pie filling on top of the frosting and add a layer of pecan halves (reserving several to decorate the top).  Place second layer cake on top and frost both cakes with the icing/cool whip mixture.  Garnish by placing remaining pie filling in center of cake and making a ring around the edge with the pecan halves.
