Tips and Tidbits
I
found the bones of this recipe at the food network website.
I changed things a bit and made it smaller (the original
recipe was for 8 or 10 people) and made it better fit the
tastes of my family.
This
is great for entertaining; you can prepare the dish up to the
point of putting it in the oven before your guests arrive
-giving you time to clean up and look like the perfect
hostess.

Chicken
Parmesan

4 split
chicken breasts, boneless & skinless |
2 eggs |

garlic salt |
1/2 jar spaghetti
sauce (I use Classico) |
|
black pepper |
4 oz shredded
mozzarella cheese |
|
Italian bread
crumbs |
oil or butter for
frying |
Preheat oven to 350*. Spread a thin layer of sauce in a 9x13
baking dish. Using a meat mallet pound chicken breasts to a
uniform thickness. Season chicken breasts with garlic salt and
black pepper. Beat eggs in a small dish. Dredge chicken
in eggs then bread crumbs and fry until golden brown. Place
browned chicken in baking dish on top of sauce. Top each
breast with an additional tablespoon of sauce. Bake for 30
minutes and add 1 oz cheese to each breast. Bake until cheese
is melted. Serve with cooked pasta (I use the other half jar
sauce and 2 tablespoons butter to coat pasta), garlic toast
and salad. |
