Tips and Tidbits
Years ago I worked in a grocery store deli where we coated
whole chickens in season salt and baked them. I lowered
the temperature and added a bit to the cooking time to create
an even juicer bird. |

Chicken

1 3-4 pound
chicken |
season salt |

black pepper |
garlic salt |
Preheat oven to 325*. Wash and pat dry your chicken.
Place in a glass baking dish and tuck under wings.
Sprinkle on season salt, pepper and garlic salt (I use more
season salt and pepper and go light with the garlic salt.)
Bake for about 3 hours or until you can wiggle the leg of the
chicken and feel no give and thigh juices run clear. |
